Weekend recap and more

We had a great weekend…weather was gorgeous!  I love being able to open the windows to let some fresh air in.  On Saturday morning (after Mike let me sleep in!) we headed to the Fall Festival Parade in downtown Zionsville.  Libby had a great time watching the firetrucks, cars, band and people march by.  She also loved the balloon she was given.  After the parade we went to lunch at Carter’s Ice Cream parlor - it was great and a super cute, small, 60s diner setting.

After Libby’s nap we headed back to the Fall Festival to partake in the festival.  The festival takes place in Lion’s park - the same park we play in most Saturday’s after the Farmer’s Market, so Libby had a great time playing on the swing sets and slides.  We also walked through the carnival rides - Libby kept pointing to the rides and saying over and over - WOAH! WOW! WOAH!.  I mentioned winning a goldfish for Libby, but that idea didn’t get very far. . . maybe next year.  The highlight of the festival was the train ride Libby and I rode on.  Mike took some great video; here’s a link. Libby was all smiles and truly seemed to enjoy herself.

Sunday I hosted a small shower for our new neighbors Dave and Lisa.  They had baby Aidan 5 weeks early but everyone is happy and healthy.  I was able to use my large cupcake pan and it turned out great (I’ll post pics soon).

I tried a quick and easy recipe for dinner tonight, thanks to the Kraft Food and Family mag.  I was able to use lots of leftovers I had lying around…chicken, pork tenderloin and the caprese sticks I made for the shower.  I cut up the tomatoes and added to the stuffing along with the canned.  I mixed some of the mozzarella in with the stuffing and added the leftover on top.  It was pretty good - very quick and easy!
