Weight Watcher’s Quesadillas with a twist

We made these veggie quesadillas last night, but I added a can of corn and some left over chicken and pork that we had - they were good. I always top the quesadillas with smashed avocado mixed with salsa - yum! We made 4 quesadillas and had a lot of filling left over that I froze for next time.

Weight Watcher’s Quesadillas
1 can black beans drained
1c. salsa (I added a little more)
1 zucchini, shredded
3/4 c. cheese
8 tortillas (or however many you need)

Mix the beans, salsa, and zucchini together in a bowl (and whatever other ingredients you want to add). Spray bottom of frying pan with cooking spray and place tortilla in pan. Fill with mixture and sprinkle with cheese. Place another tortilla on top. Cook on each side (about 5 minutes, or until browned).

Note: It’s easier to just use one tortilla and just fold it over, then flip.

Free mini-subscription to The Nest

I know quite a few of my blog readers have been addicted to The Knot at one time or another: whether it be for wedding planning purposes or to look up past high school crushes to see if they’ve wed (you know who you are).  I too spent a lot of time on theknot.com in 2002 and 2003.  I never really got into the other site they launched, The Nest but I my curiosity peaked when I read on ljc (one of my favorite blogs) that you could get a free mini-subsciption to The Nest Magazine.

Libby update: we’ve had some great nights this week!  Libby is falling asleep by herself in her crib and sleeping in 4-5 hour spans at night.  So I’ve been going to bed at midnight and waking up at 4: 30 or 5 to feed her and then she’ll go back down around 6 and sleep until 9:30 or 10.  Not bad at all!  Last night she wasn’t tired and struggled falling asleep but I think that’s because she slept very comfortably on Mom from 8 - 11 pm. . .we need to work on keeping her awake during that time.

A big day

Today has been my most productive day since my Mom left!  This weekend, Libby started eating more and going longer periods of time between feeds during the day (night’s are a different story). . .typically 4-5 hours between feedings now.  She’s still not staying awake longer (much to our dismay).  Today I was able to run to Target for groceries, the post office, get gas and run through the drive through at McDonalds (I can still have cravings, right?!).  I made it home started dinner, worked on some thank you notes and caught up on some email all before she woke up.  After she woke up and ate, we walked to the clubhouse to get the mail and Libby fell asleep (again).  During this nap I was able to make dinner (instead of defrosting something I made before Libby), post a blog, email a little more and work on thank you notes and cleaning up the family room kitchen.

I know this sounds silly, but I am excited about all that I got done today!  Keep your fingers crossed that Libby will sleep as well as she did today - tonight . . .wishful thinking, I know!

A funny thing happened . . .

mms.jpgFor those of you that have known me for a while or read the side bar on the blog, know that I have never been a fan of chocolate until June of last year, that is. That’s right I got pregnant and could not get enough of the stuff. It’s like I made up for 28 chocolate free years in 10 months. I specifically craved peanut M&Ms but also enjoyed Twix and Snickers.

The good news is. . .the cravings and desires for chocolate are gone. Back in October/November I stocked up on pink peanut M&Ms to celebrate the arrival of our daughter. I have them in a bowl on the coffee table and have no desire to partake . . .it’s so strange, but I must say I am relieved. I was not sure how I was going to lose the baby weight if my chocolate cravings continued. I just wonder if Libby will crave the stuff since she got so much in the womb!
