Quick and easy applesauce
Mike and I are big fans of pork tenderloin. Growing up we always had applesauce with pork chops, pork tenderloin, etc. For some reason I always forget to buy applesauce, tonight was no exception. We had a great dinner of pork tenderloin, good rice and broccoli but I noticed something was missing - the applesauce! One of my Mom’s good friends Kathy shared a quick and easy recipe with me a while ago. . .the problem - I couldn’t find it and my meal was getting cold.
I did remember one thing - peel and sliced apples and microwave for 3 minutes. I did that - took them out of the microwave, smashed/stirred around with a fork, added a dash of cinnimon and sugar and Voila! I had excellent applesauce and healthy, too! I am going to do this from now on - it’s great - you can make as much or as little as you want. I think this will be great for babies too!

I just made this applesauce tonight! I put it in my mini-food-processor and it was so easy and really delicious. Thanks for another great idea, Shannon!
