A healthy spin on one of my favorite appetizers
I always make spinach artichoke dip - it’s one of my favorites. I was flipping through an old magazine at the spa last week when I came across Rocco DiSpirito’s healthy spin on my old favorite. I think this is from Rocco’s 5 minute flavor recipe book.
Drain 1, 14-oz can water-packed artichoke hearts. Chop. Thaw and drain a brick of frozen spinach. Place spinach and artichoke hearts in microwave-safe dish. Add 3/4 cup lowfat yogurt and stir until blended. Sprinkle in 1 cup grated parmigiano cheese and stir. Press 2 cloves garlic, chop 2 T. basil and mix all ingredients together. Microwave 3 minutes on high. Stir. Microwave 2 minutes more.
Serve warm with pita chips.
