Mango Peach Salsa
Heather bought some outstanding mango peach salsa for her party last Saturday. It was so good, that we bought some at our next trip to Costco. I was telling Alison about it explaining that I had so much and would give her some the next time I saw her. She laughed saying she had a container in her fridge. I’ve been trying to come up with creative ways to use the salsa; it would be great with any kind of white fish. I also thought it would be good with pork chops.
I have a great recipe for a pork chop marinade that I got from Laurie who got it from Cooking Light, I think.
Pork Chop Teriyaki Merinade
4 pork chops (approx ¾ in chick)
¼ c low sodium soy sauce
3 T minced onion
2 T white wine
2 T lime juice
1 T ginger
1 ½ t brown sugar
2 minced garlic cloves
Trim fat from pork. Combine pork with ingredients in large zip lock bag. Seal and Marinade in fridge for 4 hours. Remove and grill until done.
