Lunch, anyone?

Panini_banner_small.jpgI try to bring my lunch to work most days and so do most of the people on my team at work.  One of my co-workers was raving about the new Lean Cuisine Grilled Panini’s and they are as good as she said.  I tried the southwest chicken sandwich yesterday and it was great.  I was quite skeptical because I hate soggy sandwiches and these were not soggy, in fact quite crispy and good.  It was also a good size sandwich, I was not hungry later in the day.  I wholeheartedly recommend – bon appetit!

    These ARE delicious…my Jewel is almost always sold out so it is a treat when I get to eat one of these rather than another lean cuisine meal for lunch.

    Yes, I agree I thouroughly enjoy these, however as Sarah mentioned the grocery store is out of them a lot. I would say that the southwest chix is my fav.

    [...] I receive emails from Martha Stewart with party ideas, recipes and general good things (insert mocking comment here, ladies).  On Monday I was reading one of the emails and Martha was talking about how taco bars are perfect for summer entertaining.  I could not stop thinking about tacos!  At lunch, my friend at work Cori (the same one that introduced me to the Lean Cuisine Panini) mentioned that she had brought left over taco pie for lunch.  TACO PIE?  I had to have this recipe (those of you that know me remember how much I love chicken pot pie)!  I found the recipe and made it for dinner on Monday night and I must say it’s great!  The nutritional details leave a lot to be desired, but Cori gave me some pointers on how to make it healthier: light crescent rolls, light sour cream, and light/reduced fat chips.  I made the mistake of using baked Tostitos; I would not recommend using the baked chips – they get soggy.  I cut up tomatoes, olives and avocado to serve over the top – yum!  Add a margarita and all is well with the world.  Get the recipe here.
