Strawberry Pretzel Cake

Last night Mike made the strawberry pretzel cake I’ve been wanting to try for quite some time. Bob and Heather came over for a fun, relaxing Friday night, so it was the perfect time to make the cake.

The cake was good – a strange combination of a bunch of different flavors. We especially loved the pretzel crust. I think we’re going to try the pretzel crust with a simple chocolate pudding pie – I’m thinking it will taste like a chocolate covered pretzel: YUM!

Here’s the recipe if you’re interested:

Strawberry Pretzel Cake
* 2 cups crushed pretzels
* 3/4 cup margarine, melted
* 3 Tablespoons sugar
* 1 (8 ounces) cream cheese softened
* 1 (9 ounces) Cool Whip
* 1 cup sugar
* 1 (6 ounces) pkg. strawberry jello
* 2 cups boiling water
* 20 ounces unsweetened frozen strawberries

Mix crushed pretzels, margarine, and sugar together. Press into a 9×13 inch pan. Bake at 400 degrees for 8 minutes. Cool. Combine cream cheese, Cool Whip and sugar. Mix well. Spread on cooled crust. Mix jello with water then add frozen berries. Stir until berries soften and jello start to thicken. Gently pour or spread mixture on top of cream cheese layer. Refrigerate.
